Ingredients:
1 Kg lean stew beef
2 medium onions, sliced 2 large carrots diced 2 medium Irish potatoes diced
1/3 cup apricot jam
2 whole garlic cloves
1 tablespoon curry powder, or to taste
1/4 teaspoon salt
1/2 teaspoon paprika
1/4 teaspoon black pepper
3/4 cup beef broth
Directions:
Add all ingredients to a large slow cooker. Cover and cook on low 8 to 10 hours or high 4-6 hours. Serve over rice. .
