Chimmichurri Beef Fillet šŸŒæšŸ„©šŸ§‚

INGREDIENTS šŸ“–

1kg whole UVS Beef Fillet

Salt and black pepper

Beef rub

Garlic butter

Rosemary

1/2 cup olive oil

2 tbsp balsamic vinegar

4 cloves chopped garlic (finely chopped)

1 medium red chilli chopped

1/2 cup finely chopped coriander

1/2 tsp salt

1/2 lemon juice


METHOD: šŸ§Ŗ


1. Preheat oven to 200.C

2. Season the whole UVS fillet with salt, black pepper and some beef rub of choice.

3. In a clean bowl prepare the chimichurri sauce by adding 1/2 cup of olive olive, 1/2 cup of chopped coriander, garlic, balsamic vinegar, chopped chilli, salt, black pepper and lemon juice together. Mix together and set aside until serving.(Note: use less chilli for a milder sauce) 4. Drizzle the fillet with 1 tbsp of oil and season with salt & black pepper. Briefly sear the fillet in a large pan on medium high heat until browned all over, then remove from the heat.

5. Once seared, place the fillet in an oven tray and cook in the oven for 25 minutes for rare, 30 to 35 minutes for medium, or 40 minutes for well done.

7. When your preferred cooking time is timeā€™s up, remove the fillet from the oven onto a board and leave to rest for 5-10 minutes.

8. Before slicing, drizzle some of the chimichurri sauce over the steaks. Serve with a side of your choice!
